Chana Masala Directions

Ingredients

From the Market:

Amazing Foods BC

  • 2 x bags Chana Masala Mix

Foraged Land Farms

  • bag of sprouted chickpeas

Forstbauer Farms

  • 10 medium potatoes
  • 3 carrots

Plantveda

  • Cooking Cream

Other

  • Basmati Rice
  • Oil/Butter/Ghee
  • 2 large tins diced tomatoes
  • Large Onion
  • 6 cloves garlic
  • Fresh cilantro

Cooking Prep

Peal (optional) and cut potatoes into 1 “squares (bite size) leave in water so they do not brown

Peal and chop carrots into 1” 1/2 rounds

Dice onion into small pieces

Chop garlic into small pieces

Rinse 2 cups Basmati several times until water runs clear

 

Cooking Directions

Cook 2 cups of rice with 4 cups water using absorption method (bring to boil, reduce to simmer until water is absorbed, take off heat and rest covered)

In a large pot, add 1/4cup of Ghee or oil of choice

Cook onions on medium low heat until browned through

Add garlic and chana masala spice mix cook for another 5 min

Add in 2 x tins of diced tomatoes

Add in potatoes, carrots and chickpeas cook for 10 min

If there is not enough liquid add vegetable stock to cover vegetables + legumes

Season with Salt and Pepper

When veggies are tender remove from heat and stir in Plantveda cream of choice

Serve on top steamed basmati rice

Garnish with fresh cilantro
